Poor Man’s Supper
My grandmother used hotdogs or sausage—whichever was on sale. I use spicy andouille sausage and lots of Cajun seasoning. Scramble a few eggs and make toast, and it’s a cheap supper that tastes amazing.
Ingredients
- Potatoes (diced into cubes)
- 1/2 stick of butter or oil (we are in GA, so real “butta” is used—usually a whole stick was used)
- Onion (diced)
- Garlic (diced)
- Sausage or hotdogs (spicy andouille sausage recommended)
- Salt and pepper
- Old Bay seasoning
- Bay leaf or two
- Water
- Eggs (for scrambling)
- Bread (for toast)
Instructions
- Dice potatoes into cubes and put them into a pan with a half a stick of butter or oil (we are in GA, so real “butta” is used—usually a whole stick was used). Brown potatoes.
- Toss in diced onion and garlic, and brown slightly in cast iron.
- Add sausage, salt and pepper, Old Bay seasoning, and a bay leaf or two.
- Add a little water once all that has a minute to mix together.
- Cook until potatoes just start to soften.
- Add more salt and pepper as needed.
- Scramble some eggs and cook some toast.
This was a Depression staple, and hot dogs were used if needed. Even tonight, this dinner fed four with LOTS of leftovers, and it cost $3 for potatoes, $5 for 2 packs of andouille sausage, $1 for a sweet onion, and we had eggs from my uncle’s chickens. It would have easily fed 6 or more for $10.
