Skillet Cornbread Recipe
Ingredients:
- 1 cup cornmeal*
- 1/2 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup buttermilk
- 1/4 cup oil
- 2 large eggs
Instructions:
- Preheat oven to 400 degrees. Grease an iron skillet, and put it in the oven while it’s preheating.
- Combine dry ingredients.
- Combine liquid ingredients.
- Combine the two mixtures.
- Pour into hot skillet.
- Bake at 400 degrees for 20-25 minutes or until golden brown.
I doubled the recipe and baked it for about 40 minutes to get the nice color I wanted!
