Sweet Potato Pound Cake Recipe!!!
Pound Cake Batter
- 8 oz Cream Cheese
- 8 tbsp Crisco Shortening (Butter Flavor)
- 2 sticks Butter
- 3 cups Sugar
- 5 Eggs
- 3 cups All Purpose Flour (I used Swan Cake Flour)
- 1 cup Milk
- 2 tsps Vanilla extract
- 1/2 tsp Baking Powder
- 1/2 tsp Salt
Sweet Potato Filling
- 4 large Sweet Potatoes
- 2 large Eggs
- 1/4 cup Melted Butter
- 1/4 cup Milk
- 1 cup of Sugar
- 1/2 cup Brown Sugar
- 3 tbsps All Purpose Flour (I used Swan Cake Flour)
- 1 tsp Vanilla Extract
- 1 tsp Cinnamon
- 1/4 tsp Nutmeg
Caramel Glaze
- 1 1/2 cups Powder Sugar
- 2 tsps Caramel Syrup
- 2 tbsps Milk
- 1/2 tsp Vanilla Extract
- 2 pinches of Salt
Cake Mix by the Pound:
- Put flour, salt, and baking powder in a bowl and mix them together. Put aside.
- Melt butter and cream cheese together. Add sugar one cup at a time, then eggs one at a time, and finally vanilla extract.
- One at a time, add the flour mixture and milk, starting with the flour and finishing with the milk. Put aside.
Filling for Sweet Potatoes:
- Once the potatoes are mashed, add the rest of the ingredients and mix them together until there are no more lumps.
Baking Instructions:
- Put the pound cake in the oven at 325°F for one hour and twenty minutes, or until a toothpick or fork comes out clean.
- Let the cake cool in the pan for twenty to twenty-five minutes.
Glaze:
- Powdered sugar, caramel syrup, salt, vanilla extract, and milk should all be mixed together in a small bowl.
- Pour over the cooled cake.
