Aunt's Moist Mayonnaise Cornbread

An ultra-moist family recipe featuring mayonnaise, buttermilk, and a sizzling cast-iron skillet crust.

Ingredients
  

  • 2 cups cornmeal
  • 1 cup all-purpose flour
  • 2 eggs
  • 1 cup mayo
  • 2 to 2.5 cups buttermilk
  • 1/2 cup sugar
  • 3 tsps salt
  • 1/2 cup vegetable oil plus 1/2 cup for skillet

Instructions
 

  • Preheat oven to 375°F. Have a cast-iron skillet with 1/2 cup vegetable oil heating on medium-high heat while preparing batter.
  • Mix cornmeal, flour, eggs, mayo, buttermilk, sugar, salt, and 1/2 cup oil until batter achieves a balance of not too thin or thick.
  • Pour batter into the hot skillet; it should sizzle a bit in the oil.
  • Smooth the surface of the poured batter out with a silicone spatula—oil will pool around the surface of the batter as intended.
  • Bake until the crust is golden brown, around 35 minutes.

Notes

Serve warm with traditional meals like fried cabbage, potatoes, and smoked sausage.
