Crispy skillet cakes made with corn meal mix and hot water—perfect sweet or savory treat.

Ingredients
- 1 cup corn meal mix
- 1 tsp salt
- 1 tsp sugar
optional
- 3/4 cup boiling water
- 2–3 tbsp cooking oil
Instructions
Mix corn meal, salt, sugar; stir in boiling water until thick.
Heat oil in skillet over medium-high.
Drop batter by spoonfuls; cook 1–2 min per side until golden.
Drain on paper towels; serve hot.
Notes
- Add cheese or herbs for variation.
- Use fine cornmeal plus leaveners if no mix available.
