Corn Meal Cakes

Crispy skillet cakes made with corn meal mix and hot water—perfect sweet or savory treat.

Ingredients
  

  • - 1 cup corn meal mix
  • - 1 tsp salt
  • - 1 tsp sugar optional
  • - 3/4 cup boiling water
  • - 2–3 tbsp cooking oil

Instructions
 

  • Mix corn meal, salt, sugar; stir in boiling water until thick.
  • Heat oil in skillet over medium-high.
  • Drop batter by spoonfuls; cook 1–2 min per side until golden.
  • Drain on paper towels; serve hot.

Notes

- Add cheese or herbs for variation.
- Use fine cornmeal plus leaveners if no mix available.
