Preheat oven to 350°F. Line baking sheets with parchment.
Cream shortening, butter, sugar & salt (2–4 minutes).
Add egg, vanilla, and almond; mix well.
Add cake flour until dough forms.
Scoop with a #60 scoop; roll bottoms in jimmies.
Press a thumb indentation in the center of each.
Bake 14 minutes; cookies should remain pale.
Cool completely.
Make your chosen frosting.
Pipe frosting into each thumbprint using a star tip.
