Kaufmann’s Thumbprint Cookies

Ingredients
  

  • Cookies:
  • cup shortening
  • 6 tbsp butter room temp
  • cup sugar
  • ¼ tsp salt
  • 1 egg
  • 1 tsp vanilla
  • ¼ tsp almond extract
  • 2 cups cake flour
  • 1 cup jimmie sprinkles
  • Vanilla Frosting:
  • ½ cup butter
  • cups powdered sugar
  • tsp vanilla
  • ¼ tsp almond
  • Pinch salt
  • Chocolate Frosting:
  • 6 tbsp butter
  • 2⅓ cups powdered sugar
  • ¾ cup cocoa
  • 1 tsp vanilla
  • ¼ tsp salt
  • ¼ cup whole milk

Instructions
 

  • Preheat oven to 350°F. Line baking sheets with parchment.
  • Cream shortening, butter, sugar & salt (2–4 minutes).
  • Add egg, vanilla, and almond; mix well.
  • Add cake flour until dough forms.
  • Scoop with a #60 scoop; roll bottoms in jimmies.
  • Press a thumb indentation in the center of each.
  • Bake 14 minutes; cookies should remain pale.
  • Cool completely.
  • Make your chosen frosting.
  • Pipe frosting into each thumbprint using a star tip.

Notes

To make cake flour: 2 cups AP flour + 2 tbsp cornstarch.
Store frosted cookies 5 days room temp or freeze unfrosted 2 months.
