Mexican Lasagna Recipe
: A cheesy, layered twist on classic lasagna with tortillas, taco beef, beans, salsa, and plenty of melted cheese
- 1 lb ground beef
- 1 medium onion chopped
- 1 packet taco seasoning
- 1 can black beans drained and rinsed
- 1 cup corn
- 2 cups salsa divided
- 6 –8 flour tortillas
- 3 cups shredded cheddar and Monterey Jack cheese
- Sour cream and cilantro for serving
Preheat oven to 350°F. Grease a 9x13-inch baking dish.
Cook ground beef and onion until browned. Drain grease.
Stir in taco seasoning, beans, corn, and 1 cup salsa. Simmer 3–4 minutes.
Spread a thin layer of salsa in prepared dish. Add tortillas, beef mixture, and cheese. Repeat layers, ending with cheese.
Cover with foil; bake 20 minutes. Remove foil and bake 10 minutes more.
Rest 5 minutes before slicing. Serve with sour cream and cilantro.
For spice lovers, add jalapeños or hot sauce.
