Mexican Lasagna Recipe

: A cheesy, layered twist on classic lasagna with tortillas, taco beef, beans, salsa, and plenty of melted cheese

Ingredients
  

  • 1 lb ground beef
  • 1 medium onion chopped
  • 1 packet taco seasoning
  • 1 can black beans drained and rinsed
  • 1 cup corn
  • 2 cups salsa divided
  • 6 –8 flour tortillas
  • 3 cups shredded cheddar and Monterey Jack cheese
  • Sour cream and cilantro for serving

Instructions
 

  • Preheat oven to 350°F. Grease a 9x13-inch baking dish.
  • Cook ground beef and onion until browned. Drain grease.
  • Stir in taco seasoning, beans, corn, and 1 cup salsa. Simmer 3–4 minutes.
  • Spread a thin layer of salsa in prepared dish. Add tortillas, beef mixture, and cheese. Repeat layers, ending with cheese.
  • Cover with foil; bake 20 minutes. Remove foil and bake 10 minutes more.
  • Rest 5 minutes before slicing. Serve with sour cream and cilantro.

Notes

For spice lovers, add jalapeños or hot sauce.
