Old-Fashioned Southern Pecan Pralines
Classic Southern pecan pralines made with brown sugar, cream, butter, and pecan halves. Rich, buttery homemade candy with a creamy, slightly crumbly texture.
- 1 cup packed light brown sugar
- 1 cup granulated sugar
- 1/2 cup heavy whipping cream
- 4 tablespoons unsalted butter
- 2 cups pecan halves
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Line two baking sheets with parchment paper.
Combine brown sugar, granulated sugar, heavy cream, butter, and salt in a heavy saucepan.
Heat over medium heat, stirring until sugar dissolves.
Bring to a boil and cook to 235–240°F.
Remove from heat and stir in pecans and vanilla.
Stir for 1–3 minutes until the mixture begins thickening and loses some shine.
Quickly spoon onto parchment paper.
Cool at room temperature for approximately 30 minutes until set.
Use a candy thermometer for accuracy. Avoid excessive stirring while boiling. Have parchment-lined trays ready before cooking. Work quickly once the mixture begins thickening. Store in an airtight container.
