Plain and Simple Southern Pimento Cheese

A classic, simple Southern pimento cheese spread made with sharp cheddar, drained pimentos, grated onion, and Duke's mayonnaise. Perfect on saltines or fresh tomatoes!

Equipment

  • Box grater
  • Large mixing bowl
  • - Wooden spoon or spatula
  • Glass jar or airtight container for storage

Ingredients
  

  • 8 oz sharp yellow cheddar cheese block
  • 8 oz sharp white cheddar cheese block
  • 2 4 oz jars diced pimentos, thoroughly drained
  • 1 tsp white or yellow onion finely grated
  • 3/4 to 1 cup Duke's Mayonnaise
  • 1/2 tsp freshly cracked black pepper
  • 1 to 2 tbsp finely diced jalapeƱos optional

Instructions
 

  • Using a box grater, shred both the sharp yellow cheddar and the white cheddar blocks. Do not use pre-shredded bagged cheese.
  • Drain the jars of pimentos thoroughly, pressing out excess moisture with a paper towel if necessary.
  • Use the finest side of the box grater to grate exactly 1 teaspoon of fresh onion.
  • In a large mixing bowl, combine the grated cheeses, drained pimentos, grated onion, and black pepper. Add any optional jalapeƱos if using.
  • Add 3/4 cup of Duke's Mayonnaise to the bowl. Mix vigorously with a wooden spoon until everything is well combined and creamy. Add the remaining 1/4 cup of mayonnaise if the mixture seems too dry.
  • Transfer the spread to a glass jar or an airtight container.
  • Chill in the refrigerator for at least 12 hours (overnight is best) to allow the flavors to meld together before serving.

Notes

No Garlic Powder: Avoid adding garlic powder, as it can give the dip an artificial flavor.
Mayonnaise: Duke's is highly recommended for its tangy flavor and lack of added sugar.
