Slow Cooker Sausage and Cabbage

: An incredibly easy, hands-off dinner featuring smoky sliced sausage and tender cabbage braised in a savory, buttery broth. The perfect cozy weeknight comfort food!

Ingredients

  • 14 oz package Smoked sausage or kielbasa sliced into 1/2-inch rounds
  • 1 medium head Green cabbage cored and roughly chopped into large wedges
  • 1 medium Yellow onion sliced
  • 2 cloves Garlic minced
  • 1 cup Low-sodium chicken broth
  • 1/2 tsp Salt
  • 1/2 tsp Black pepper
  • 1 tsp Dried thyme or caraway seeds
  • 2 tbsp Butter cut into small cubes

Instructions

  • Lightly grease the inside of the slow cooker insert with non-stick cooking spray.
  • Place the chopped green cabbage wedges evenly across the bottom of the slow cooker.
  • Scatter the sliced yellow onion, minced garlic, and sliced smoked sausage directly over the top of the cabbage.
  • Pour the chicken broth evenly over the ingredients. Sprinkle with the salt, black pepper, and dried thyme.
  • Place the small cubes of butter randomly across the top of the meat and vegetables.
  • Cover the slow cooker and cook on LOW for 5-6 hours, or on HIGH for 3-4 hours, until the cabbage is incredibly tender.
  • Using a stainless steel spatula, toss the ingredients gently before serving to mix the savory pan juices and melted butter over the cabbage and sausage.

Notes

Ensure your cabbage is cut into large wedges, not thin shreds, so it doesn't turn to mush during the long cook time.
If you want extra depth of flavor, take 5 minutes to sear the sliced sausage in a skillet before adding it to the slow cooker.
For a slightly tangy finish, stir in 1 tablespoon of apple cider vinegar right before serving.
