Southern-Style Bacon Tomato Gravy

A rustic, savory Southern gravy made with smoky bacon drippings, browned flour roux, and petite diced tomatoes.

Equipment

  • Baking sheet & aluminum foil
  • Skillet
  • Sifter
  • Fork or whisk

Ingredients
  

  • Bacon grease from cooking bacon
  • 1 –2 cans petite diced tomatoes
  • 2 –3 tablespoons bacon drippings
  • Flour for thickening
  • Salt and pepper to taste

Instructions
 

  • Cook bacon in the oven lined with foil at 375°F to desired crispness, or fry in a skillet. Drain on paper towels and reserve grease.
  • Pour 2 to 3 tablespoons of drippings (with bits) into a skillet and heat to medium-high.
  • Use a sifter to add flour to the drippings, stir with a fork, and let it brown almost to a burn.
  • Turn heat to medium-low, quickly add liquid from the canned petite diced tomatoes, and let simmer down.
  • Add all the tomatoes while stirring constantly, adding more as needed.
  • Season with salt and pepper to taste.

Notes

Real bacon grease is essential for authentic flavor.
Serve warm over biscuits, grits, or potatoes.
