Southern-Style Bacon Tomato Gravy
A rustic, savory Southern gravy made with smoky bacon drippings, browned flour roux, and petite diced tomatoes.
- Bacon grease from cooking bacon
- 1 –2 cans petite diced tomatoes
- 2 –3 tablespoons bacon drippings
- Flour for thickening
- Salt and pepper to taste
Cook bacon in the oven lined with foil at 375°F to desired crispness, or fry in a skillet. Drain on paper towels and reserve grease.
Pour 2 to 3 tablespoons of drippings (with bits) into a skillet and heat to medium-high.
Use a sifter to add flour to the drippings, stir with a fork, and let it brown almost to a burn.
Turn heat to medium-low, quickly add liquid from the canned petite diced tomatoes, and let simmer down.
Add all the tomatoes while stirring constantly, adding more as needed.
Season with salt and pepper to taste.
Real bacon grease is essential for authentic flavor.
Serve warm over biscuits, grits, or potatoes.
