Traditional Scottish Shortbread Cookies Recipe

Ingredients
  

  • 250 g butter 1 cup, softened
  • 100 g 1/2 cup caster sugar
  • 300 g 2 cups plain flour, sifted
  • 90 g 1/2 cup rice flour, sifted

Instructions
 

  • Preheat oven to 150°C (300°F). Grease trays.
  • Cream butter and sugar until pale and fluffy.
  • Gradually mix in sifted flours until almost combined.
  • Bring dough together by hand, knead gently.
  • Roll and cut into shapes.
  • Bake 40–45 minutes until golden.
  • Cool on wire rack.

Notes

Use rice flour for crisp texture.
Store airtight for 2 weeks.
Freeze up to 2 months.
Flavor with zest, vanilla, or spices.
