Ingredients
- 1 1/2 cups milk
- 1 cup cornmeal
- 1 cup all-purpose flour
- 4 tsp baking powder
- 1 to 3 tbsp sugar
to taste
- 1 tsp salt
- 3 eggs
- 3 tbsp shortening
divided
Instructions
In a large bowl, beat the eggs.
Add milk, salt, sugar, baking powder, and 2 tbsp shortening. Mix well.
Stir in cornmeal, then flour, until just combined.
Preheat oven to 425°F (220°C).
Melt 1 tbsp shortening in an oven-safe cast iron skillet.
Pour batter into hot skillet.
Bake for about 30 minutes or until golden and a toothpick comes out clean.
Let cool slightly. Serve warm with butter.
