Traditional Southern Cornbread

Ingredients
  

  • - 1 1/2 cups milk
  • - 1 cup cornmeal
  • - 1 cup all-purpose flour
  • - 4 tsp baking powder
  • - 1 to 3 tbsp sugar to taste
  • - 1 tsp salt
  • - 3 eggs
  • - 3 tbsp shortening divided

Instructions
 

  • In a large bowl, beat the eggs.
  • Add milk, salt, sugar, baking powder, and 2 tbsp shortening. Mix well.
  • Stir in cornmeal, then flour, until just combined.
  • Preheat oven to 425°F (220°C).
  • Melt 1 tbsp shortening in an oven-safe cast iron skillet.
  • Pour batter into hot skillet.
  • Bake for about 30 minutes or until golden and a toothpick comes out clean.
  • Let cool slightly. Serve warm with butter.
