Cast Iron Recipe: Fluffy Biscuits, Sausage Gravy

For my biscuits…this honestly, makes the lightest and fluffiest biscuits.

Ingredients:

  • 2 C all-purpose flour
  • 1 TBS baking powder
  • 1 tsp salt
  • 1 TBS white sugar
  • 1/3 C shortening
  • 1 C milk

Instructions:

  1. Preheat oven to 425.
  2. In a large bowl, whisk together flour, baking powder, salt, and sugar.
  3. Cut in shortening until mixture resembles coarse crumbs.
  4. Gradually stir in milk until dough pulls away from the side of the bowl.
  5. Turn out onto a floured surface and knead just a few times.
  6. Pat or roll out to about 1″ thick.
  7. Cut biscuits with a large cutter or glass dipped in flour and place on an ungreased cookie sheet (a small cast iron skillet can also be used).
  8. Bake for 13-15 minutes in the preheated oven or until edges begin to brown.
  9. Brush tops with butter.

Additional components:

Sausage Gravy:

  • Fry bulk sausage with a little bacon grease until browned.
  • Sprinkle flour over it, stirring until blended well.
  • Add milk slowly while stirring until desired thickness is achieved.
  • Season with salt and pepper to taste.

Home Fries:

  • Dice potatoes and add a little onion.
  • Fry in a little bacon grease until cooked and golden brown.

Dippy (Over Easy) Egg:

  • Fry the egg on a cast iron flat top or skillet.

Serve the biscuits topped with sausage gravy, alongside home fries and a dippy egg. Enjoy with a mug of hot sweet tea. Sure tasted good.
