Cake with Hawaiian Pineapples
Preheat oven to 350°F.
Ingredients:
- 2 cups of all-purpose flour
- 2 cups sugar
- 2 eggs
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- Pinch of salt
- 1 – 20 oz can crushed pineapple (undrained) with juice – no syrup
- 1 cup chopped nuts (optional)
Frosting with Cream Cheese:
Ingredients:
- 1 stick of butter or 1/2 cup
- 1 – 8 ounces softened cream cheese
- 1 teaspoon vanilla
- 1 1/2 cups confectioners’ sugar
- Coconut for garnish
Instructions:
- In a mixing dish, combine all of the cake ingredients.
- Bake at 350°F for 35-40 minutes (until the top is golden brown) in a greased 9X13 inch pan.
Frosting:
- Cream together the butter, cream cheese, and vanilla until smooth.
- Mix in the powdered sugar gradually.
- While the cake is still warm, frost it with cream cheese frosting.
- If desired, top with chopped nuts.
