Moist and Delicious Roman Apple Cake – A Family Favorite
ROMAN APPLE CAKE RECIPE
Nothing fancy, but we scrape the crumbs from the pan every time. You can tell my poor old recipe is well-loved by the stains. I bake about 25 minutes in my oven, which differs from the recipe. This is a great way to use apples that have begun to shrivel. Makes a delicious, moist cake. Great as a coffee cake for breakfast, too!
Ingredients:
Mix in a large bowl and blend on medium speed.
- 1 cup granulated sugar
- 1 1/2 cups all-purpose flour
- 1/4 tsp salt
- 1/2 tsp baking powder
- 1 tsp baking soda
- 1/2 cup solid Crisco shortening
- 1 egg
- 2 cups peeled, finely chopped apples (any work, I prefer Gala)
- 1/2 cup milk
Pour into greased 9×13 pan. Add topping
Topping:
- 1/2 cup brown sugar
- 2 Tbsp soft butter or margarine
- 2 Tbsp all-purpose flour
- 2 tsp cinnamon
- 1/4 tsp ginger
- 1/2 cup chopped nuts (& raisins if desired)
Sprinkle over cake batter and bake at 350°F for 25-30 minutes.
