Old Fashioned Sausage Queso Dip

A rich, savory farmhouse classic featuring seasoned country pork sausage and diced tomatoes simmered slowly into a smooth, velvety lake of real melted American cheese.

Ingredients
  

  • 2 lbs bulk ground pork sausage
  • 2 cans 10 ounces each diced tomatoes with green chilies, un-drained
  • 2 lbs block American cheese cut into 1-inch cubes
  • 1 basket sturdy corn tortilla chips for serving
  • 1 scoop fresh guacamole optional garnish

Instructions
 

  • Place a heavy cast iron skillet or Dutch oven over medium-high heat on the stovetop.
  • Brown the ground pork sausage thoroughly for 8-10 minutes, breaking it into fine crumbles with a wooden spoon.
  • Lower the stovetop heat to medium-low, keeping the rendered sausage fat inside the pan.
  • Slice the block of American cheese into uniform 1-inch cubes to ensure an even melt.
  • Scatter the cheese cubes evenly over the hot sausage, then pour both cans of un-drained tomatoes directly over the top.
  • Stir the mixture continuously for 10-12 minutes, scraping the bottom of the pan until the cheese is completely melted and smooth.
  • Remove from the heat and serve directly from the iron pan with crisp corn chips and a cool scoop of guacamole.

Notes

Do not drain the flavorful fat from the seared sausage, as it helps emulsify the melting cheese cubes. Always melt the dairy over a low or medium-low flame to prevent the proteins from separating or scorching against the iron.
