Peach Skillet Cobbler

This easy peach skillet cobbler is made with canned peaches, sour cream batter, and baked in a hot cast iron skillet until golden. Perfect with vanilla ice cream!

Ingredients
  

  • - 1 cup sugar
  • - 2 tbsp butter
  • - 1 tbsp oil
  • - 1/3 cup sour cream
  • - 1 egg
  • - 3/4 cup milk
  • - 2 tsp baking powder
  • - 2 cups flour
  • - 2 cans sliced peaches in syrup or 2 pints home-canned
  • - Optional: 1/2 cup white grape or apple juice

Instructions
 

  • Preheat oven to 350°F with skillet inside.
  • Cream sugar, butter, and oil. Add sour cream, egg, milk, baking powder, and flour.
  • Spread batter in hot skillet.
  • Pour peaches and syrup over top.
  • Bake 60 minutes or until golden and set.
  • Serve warm with vanilla ice cream!
