Sausage Hash Brown Breakfast Casserole

Ingredients
- 8–10 hash brown rounds
- 1 lb ground sausage
use ¾ of it
- 10 jumbo eggs
- ¼ cup milk
- 1 cup shredded cheese
- Salt & pepper to taste
- 1 tsp Italian seasoning
optional
- Extra shredded cheese for topping
Instructions
Preheat oven to 350°F.
Bake hash brown rounds and line bottom/sides of skillet or baking dish.
Brown sausage, drain, and set aside.
Whisk eggs, milk, seasoning. Stir in sausage and 1 cup cheese.
Pour into skillet over hash browns.
Bake for 25–30 minutes or until eggs are nearly set.
Add cheese on top, bake 5 more minutes until melted.
Let rest 5–10 minutes before slicing.
Notes
- Can be made ahead and refrigerated overnight.
- Add veggies like bell peppers or spinach.
- Use any shredded potato or tater tots as base.
