Old School Tray Bake
Ingredients:
- 350g self-raising flour
- 330g sugar
- 1 tsp baking powder
- 200g margarine, softened
- 3 eggs
- 180ml milk (room temperature)
- 2 tsp vanilla extract
- 450g icing sugar
- 1 tsp vanilla extract
- Water (just enough to make thick runny icing)
- Sprinkles (hundreds and thousands)
Instructions:
- Sieve the flour, sugar, and baking powder together.
- Add the eggs, margarine, milk, and vanilla extract.
- Mix well until smooth.
- Line a tray approximately 25cm x 30cm.
- Bake at 170°C for approximately 50 minutes. Note: All the ingredients should be at room temperature for success.
- Once cooled, turn out the tray bake and ice the bottom.
- In a separate bowl, combine the icing sugar and vanilla extract.
- Add enough water to make a thick runny icing.
- Spread the icing on the bottom of the tray bake.
- Sprinkle hundreds and thousands on top.
- If the top has peaked a bit, turn it out onto a wire rack while still warm and it will flatten.
