Old School Tray Bake


  • 350g self-raising flour
  • 330g sugar
  • 1 tsp baking powder
  • 200g margarine, softened
  • 3 eggs
  • 180ml milk (room temperature)
  • 2 tsp vanilla extract
  • 450g icing sugar
  • 1 tsp vanilla extract
  • Water (just enough to make thick runny icing)
  • Sprinkles (hundreds and thousands)


  1. Sieve the flour, sugar, and baking powder together.
  2. Add the eggs, margarine, milk, and vanilla extract.
  3. Mix well until smooth.
  4. Line a tray approximately 25cm x 30cm.
  5. Bake at 170°C for approximately 50 minutes. Note: All the ingredients should be at room temperature for success.
  6. Once cooled, turn out the tray bake and ice the bottom.
  7. In a separate bowl, combine the icing sugar and vanilla extract.
  8. Add enough water to make a thick runny icing.
  9. Spread the icing on the bottom of the tray bake.
  10. Sprinkle hundreds and thousands on top.
  11. If the top has peaked a bit, turn it out onto a wire rack while still warm and it will flatten.
