Ingredients
- Saltine crackers (enough to fill a large sheet pan)
- 1 cup + 2 tbsp butter
- 1 1/8 cup brown sugar
- 2 tsp cinnamon, divided
- 4 cups powdered sugar
- 1/4 tsp salt
- 6 tbsp hot water
- 2 tsp almond flavoring
- 1 cup white chocolate chips + a small amount of coconut oil (for smooth melting)
- Colored sugars (purple, green, and gold for Mardi Gras)

Instructions
- Prepare the Pan:
- Preheat your oven to 350°F (175°C). Spray a large sheet pan with edges with cooking spray.
- Arrange the saltine crackers in a single layer to completely fill the sheet pan.
- Make the Toffee:
- In a saucepan over medium heat, melt the butter and brown sugar together. Allow it to come to a boil and let it boil for 3 minutes without stirring.
- Stir in 1 teaspoon of cinnamon, then pour the mixture quickly over the saltines, spreading evenly. Work fast, as the toffee will harden quickly.
- Bake:
- Place the pan in the oven and bake for 5 minutes. This will help the toffee set.
- Prepare the Icing:
- While the crackers are baking, whisk together the powdered sugar, remaining teaspoon of cinnamon, and salt in a bowl.
- In a microwave-safe bowl, melt the white chocolate chips with a small amount of coconut oil in 30-second intervals, stirring between each. This should take about 3 intervals.
- Add the melted white chocolate to the powdered sugar mixture along with the hot water and almond flavoring. Stir until smooth.
- Finish the Candy:
- When the crackers come out of the oven, pour the icing over them while they’re still warm, spreading it evenly across the surface.
- Decorate:
- Sprinkle generously with colored sugars and sprinkles for a festive touch.
- Cool and Serve:
- Place the pan in the fridge to cool completely. Once cooled, break the candy into pieces or cut it into squares.
