Directions

1. Prepare the Yeast Mixture

  • In a bowl, mix sugar and honey into very warm water.
  • Stir in the yeast and let it proof in a warm place for 10 minutes until foamy.

2. Mix the Dough

  • In a separate bowl, mix salt and butter into the flour until it reaches a coarse consistency.
  • Create a well in the center of the flour and pour in the proofed yeast mixture.
  • Mix with a rubber spatula until dough begins to form.

3. Knead & Let Rise

  • Turn dough out onto a floured surface and knead for 10 minutes, turning a quarter after each knead.
  • Cover with a towel and let it rise in a warm place for 1 hour.
  • Punch down the dough and knead lightly for a couple of minutes.
  • Roll into a rectangle and cut into desired roll sizes using a pizza cutter.
  • Shape each piece into a roll by stretching and folding the top under the bottom.
  • Place rolls in a cast iron skillet, cover, and let rise for another hour.

4. Bake the Rolls

  • Preheat oven to 365°F around the 40-minute mark of the second rise.
