Grandma’s Meatloaf recipe
Ingredients:
- 1 lb lean ground beef
- 1/4 onion, chopped finely
- 1/2 sleeve crushed saltines
- 1 cup bread, small cubes
- 2 eggs
- 1 cup ketchup (divided)
- Salt, to taste
- Pepper, to taste
- Onion powder, to taste
- Garlic powder, to taste
- A couple of shakes of Mrs. Dash
- 3 russet potatoes, cut into chunks
- Some baby carrots
- About 1/4 head of cabbage, cut up
- Parsley flakes
- 1 stick salted butter, cut into chunks
Instructions:
- Mix together ground beef, onion, crushed saltines, bread cubes, eggs, 2/3 cup of ketchup, salt, pepper, onion powder, garlic powder, and Mrs. Dash. Make sure it’s worked really well with your hands so it holds together.
- Form the mixture into a loaf and place in a greased casserole dish.
- Pour the remaining ketchup (about 1/3 cup) over the top of the meatloaf.
- Around the meatloaf, arrange the cabbage, baby carrots and russet potatoes.
- Grind the vegetables with the same seasonings as the meatloaf, then top everything with parsley flakes.
- Over the veggies, scatter the salted butter bits.
- Put the dish in the oven for 1 1/2 hours at 325°F covered with aluminum foil.
