Green Beans and Potatoes
I’m not great at recipes because I don’t really measure, I just add things until it tastes good😊. But here goes
Ingredients:
- White half runner beans
- “New potatoes” (small potatoes)
- 1 large white onion
- Butter
- Chicken broth (or water)
- Bacon grease
- Salt
- Pepper
- Garlic powder
- Chopped fried bacon
Instructions
Finely chop the large white onion.
In a heavy pot, melt some butter and add the chopped onion. Cook until the onions are soft.
Add the green beans and chicken broth (or water) to the pot. Also, add bacon grease, salt, pepper, and garlic powder (adjust the seasonings to your liking).
Bring the mixture to a rolling boil, then reduce the heat to a simmer. Cover the pot with a lid and cook for approximately 30 minutes, stirring occasionally. Add more broth or water if needed.
After 30 minutes, add the new potatoes to the pot. Continue cooking for another 30 minutes or until the potatoes are soft and flavorful.
Towards the end of the cooking time, add some chopped fried bacon for extra flavor and texture.
Simmer the mixture for an additional 15 minutes.
The longer the dish cooks, the better it tastes.
Serve the green beans and potatoes alongside some buttered cornbread and fresh sliced tomatoes for a delicious meal.
