Blue Ribbon Kentucky Jam Cake
Ingredients
- 2 1/2 cups all-purpose flour
- 1/4 teaspoon salt
- 1 teaspoon allspice
- 1/2 teaspoon cinnamon
- 1 cup chopped walnuts
- 2 tablespoons flour (for coating nuts)
- 1 cup softened margarine
- 2 cups sugar
- 5 eggs
- 1 teaspoon vanilla
- 1 cup buttermilk
- 1 teaspoon baking soda
- 1 cup blackberry jam (make sure it’s jam!)
instructions
- Warm the oven up to 325 degrees.
- Flour and Grease Three 8- or 9-inch round cake pans
- Add the flour, salt, and spices and mix them together.
- Add 2 tablespoons of flour to the chopped nuts.
- Margarine and sugar should be mixed until they are light and foamy.
- Mix the eggs and vanilla together.
- Mix the soda and buttermilk together.
- Using an electric mixer, slowly mix the flour, buttermilk, and egg mixtures together until they are all well mixed.
- Add the nuts after mixing in the jam.
- Pour into cake pans that have been prepped.
- Let it bake for an hour or two.
- I usually make my own caramel icing, but the caramel sea salt icing from a can is better. It needs about three cans of icing.
