Grandma’s Meatloaf recipe

Ingredients:

  • 1 lb lean ground beef
  • 1/4 onion, chopped finely
  • 1/2 sleeve crushed saltines
  • 1 cup bread, small cubes
  • 2 eggs
  • 1 cup ketchup (divided)
  • Salt, to taste
  • Pepper, to taste
  • Onion powder, to taste
  • Garlic powder, to taste
  • A couple of shakes of Mrs. Dash
  • 3 russet potatoes, cut into chunks
  • Some baby carrots
  • About 1/4 head of cabbage, cut up
  • Parsley flakes
  • 1 stick salted butter, cut into chunks

Instructions:

  1. Mix together ground beef, onion, crushed saltines, bread cubes, eggs, 2/3 cup of ketchup, salt, pepper, onion powder, garlic powder, and Mrs. Dash. Make sure it’s worked really well with your hands so it holds together.
  2. Form the mixture into a loaf and place in a greased casserole dish.
  3. Pour the remaining ketchup (about 1/3 cup) over the top of the meatloaf.
  4. Around the meatloaf, arrange the cabbage, baby carrots and russet potatoes.
  5. Grind the vegetables with the same seasonings as the meatloaf, then top everything with parsley flakes.
  6. Over the veggies, scatter the salted butter bits.
  7. Put the dish in the oven for 1 1/2 hours at 325°F covered with aluminum foil.
