I didn’t like meatloaf growing up. Now that I get to control the spices and keep it moist I love making meatloaf. Esp meatloaf sandwiches the next day!

  • A pat of room temperature butter
  • Cooking spray

For the Sauce:

  • Sweet Baby Ray’s BBQ sauce with cayenne OR

  • I get a big mixing bowl and put my ground beef in.
  • Put a piece of white bread and pour a little milk on it just to absorb the milk.

  • Add some olive oil over.
  • Add salt, pepper, garlic powder, onion powder, Cajun seasoning, seasoning salt, dried parsley,
  • Worcestershire sauce, fresh cilantro, and chopped or shredded onion.

  • Shape and place on aluminum that has been sprayed with cooking spray.

  • Bake at 350°F until done I look to see whether it’s becoming overly dry.
  • I finish by drizzling my sauce over it, either sweet baby ray’s with some cayenne
