Apple stack cakes using my great grandmothers recipe

Ingredients:

  • 1/2 cup buttermilk
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 2 cups sugar
  • 1 cup shortening
  • 2 eggs
  • 1 tsp. vanilla
  • 4 cups all-purpose flour
  • 1 tsp. salt
  • 1 jar apple butter
  • 1/2 jar applesauce
  • Apple pie spice (to taste)

Instructions:

  1. Mix 1/2 cup buttermilk, 1 tsp. baking powder, and 1 tsp. baking soda, and set aside.
  2. Cream together 2 cups sugar and 1 cup shortening. Add 2 eggs, one at a time, and beat well after each addition.
  3. Add 1 tsp. vanilla and the buttermilk mixture, and mix until well blended.
  4. Mix 4 cups all-purpose flour and 1 tsp. salt. Using a large spoon, gradually add the flour mixture to the wet mixture.
  5. Divide the dough into 7 equal portions. Either pat evenly in a 9″ cast iron skillet and bake at 350-375°F until lightly browned (should look like a sugar cookie) or roll on a piece of parchment paper and cut with a scalloped-edge 9″ pie pan.
  6. Scrape excess dough from around the edge and bake on parchment paper. Depending on how thin you do your layers, you can get 9 layers.
  7. For the filling, mix 1 jar apple butter and 1/2 jar applesauce. Add apple pie spice to your taste, heat, and spread about 3 serving spoons between each layer as close to the edges as you can.
  8. The cake needs to sit for about 3 days before eating.
