oatmeal cream pie & cookies from scratch

Cookie Ingredients:

  • 2c light brown sugar (Packed)
  • 3/4c butter
  • 2 eggs
  • 1/2 tsp salt
  • 1tsp ground cinnamon
  • 1tsp baking powder
  • 3tbs boiling water
  • 1tsp baking soda
  • 2 1/2 c all-purpose flour
  • 2c quick oats

Filling Ingredients:

  • 1 egg white
  • 2tbs milk
  • 1tsp vanilla extract
  • 2c powdered sugar (sifted and separated into 2, 1c containers)
  • 3/4c shortening

DIRECTIONS:

  1. Preheat oven to 350 degrees and lightly grease baking sheets.
  2. Cream butter with brown sugar until light and fluffy. Beat on eggs and mix well.
  3. Stir in salt, cinnamon, baking powder, boiling water, and baking soda.
  4. Drop cookies on prepared baking sheet and bake for 10-12 minutes.

FILLING DIRECTIONS:

  1. Beat egg white, mix in milk, 1tsp vanilla, 1 cup of powdered sugar.
  2. Beat in the shortening and remaining cup of powdered sugar. Beat until light.
  3. Make sandwiches with 2 cookies and filling.
