Ingredients for Peach Skillet Cobbler

  • 1 cup sugar
  • 2 tablespoons unsalted butter (room temp)
  • 1 tablespoon vegetable oil
  • 1/3 cup sour cream
  • 1 large egg
  • 3/4 cup milk
  • 2 teaspoons baking powder
  • 2 cups all-purpose flour
  • 2 cans (15–16 oz each) sliced peaches in heavy syrup (or 2 pint jars of home-canned peaches)
  • Optional: 1/2 cup white grape or apple juice (for extra gooeyness)

How to Make Peach Skillet Cobbler

1. Preheat the Oven with the Skillet Inside

Place your cold 12-inch cast iron skillet in a cold oven. Set the oven to 350°F (175°C) and let the skillet heat up as the oven preheats. This helps give the cobbler a crisp edge and even bake.

2. Mix the Batter

In a large mixing bowl, cream together the sugar, butter, and oil. Add the sour cream and mix until smooth. Add the egg and stir until well combined.

Stir in the milk and baking powder. Then add the flour and mix until you have a thick but spreadable batter.

3. Add Batter to Hot Skillet

Carefully remove the hot skillet from the oven. Spread the batter evenly across the bottom (it will sizzle a little—just go with it!).
