Blueberry Banana Bread in a Griswold Shallow Skillet
Banana Bread on a Lodge Griddle (Pizza Style)
Ingredients:
- 3 large or 4 small, very ripe bananas
- 1 stick butter
- 1 and 1/2 cups sugar
- 2 eggs
- 1 and 1/2 teaspoons vanilla extract
- 3 to 4 cups flour (preferably around 3 1/2 cups)
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups milk chocolate chips (more or less, as desired)
- Blueberries (substitute for chocolate chips, if desired)
Directions:
- Cream butter and sugar together until light and fluffy.
- Add beaten eggs, banana, and vanilla and mix well.
- In a separate bowl, sift and combine the remaining dry ingredients (flour, baking powder, baking soda, and salt).
- Gradually add the dry ingredients to the previous mixture, mixing well. If needed, add extra flour to thicken the batter. It should not be too thin as it may “run” on the cookie sheet.
- Stir in chocolate chips or, if using blueberries, place them on top of the batter/dough and gently press them in.
- Optionally, add chopped nuts such as walnuts or pecans.
- Drop spoonfuls of the batter onto a baking sheet lightly coated with cooking spray. Alternatively, use a cast iron griddle to make a giant pizza pan style cookie or two.
- Bake at 350 degrees Fahrenheit for approximately 20 minutes or until the edges of the cookies are lightly browned. If making giant pizza pan style cookies, bake a little longer.
- This recipe yields 3 to 4 dozen cookies or a couple of giant pizza pan cookies.
