WV Ham Salad recipe
Did anyone else eat what my mom called “WV Ham Salad” as a child? I missed home. Oh, I love bologna salad! My husband from Pennsylvania had never heard of it before he tried it and loved it.
Bologna and Egg Salad Recipe
Ingredients
- 2 pounds of sandwich bologna with low salt (do not slice)
- 1 onion, cut up small
- 1 little jar of sweet pickle sauce
- 7 eggs boiled
- I have a bag of cheddar cheese shreds
- Add pepper and mayo to taste
Instructions
- Food process the meat, cheese, onion, and eggs until they are small dice. (Do not process until mush; I used the pulse button.)
- Stir in the pepper, mayo, and relish until everything is well mixed.
Serving Suggestions
- Serve on bread as a sandwich filling.
- Serve with crackers as a dip.
