Sausage Gravy, Fluffy Biscuits, and Home Fries

Guess you could say I had a cast iron supper this evening, since cast iron was all I used. Sausage gravy, homemade light fluffy biscuit, dippy (over easy) egg, home fries, applesauce and sweet tea

Sausage Gravy

  • Crumble sausage and fry it in a cast iron skillet with a little bacon grease until brown.
  • Sprinkle flour over the sausage and stir until coated.
  • Slowly stir in milk until desired thickness is achieved.
  • Season with salt and pepper to taste.

Homemade Biscuits

 

  • Preheat oven to 425°F.
  • In a large bowl, whisk together 2 cups all-purpose flour, 1 tablespoon baking powder, and 1 teaspoon salt.
  • Cut in 1/3 cup shortening until the mixture resembles coarse meal.
  • Gradually stir in 1 cup milk until the dough pulls away from the side of the bowl.
  • Turn out the dough onto a floured surface and knead it 15 to 20 times.
  • Roll the dough out to a 1-inch thickness and cut biscuits using a large cutter or a glass dipped in flour.
  • Place the biscuits on an untreated baking sheet.
  • Bake for 13 to 15 minutes in a preheated oven or until the edges begin to brown.
  • Brush the biscuits with melted butter.

Dippy Egg:

  • Fry an egg on a cast iron griddle until desired doneness.

Serve the Sausage Gravy, Homemade Biscuits, and Dippy Egg alongside:

  • Home fries
  • Applesauce
  • Sweet tea
