Memories on a Plate: Dad’s No-Bake Cookies

Hey friends! I wanted to share a little story related to the picture I’m posting.
Today I made no-bake cookies. I rarely make them but love them. I was at my mom’s house and pulled out an old recipe. You see, my dad taught me how to make them. When I was a teen, I had an obsession with cooking in the microwave, so one day I got online and found a microwave recipe for no-bakes! Ha ha! To say they were a fail was an understatement.
Daddy worked the second shift, so when he came in, I was in bed. He went through my recipe and marked it up to show his STOVE recipe. Ha ha! That’s what I used today. He passed away in 2002. It may sound silly, but I miss him so much when I use his recipe that I usually use a different one.
Here’s the recipe for those delicious no-bake cookies:
- 1 stick of butter
- 1/2 cup milk
- 3 tablespoons cocoa
- Dash of salt
- 1 cup sugar
- 1/2 cup peanut butter
- 1 capful of vanilla
- 3 cups quick oats
Here’s how to make them:
- In a medium-sized saucepan, combine the butter, milk, cocoa, salt, and sugar.
- Cook the mixture over medium heat until it comes to a boil.
- Once boiling, continue cooking for an additional 1 1/2 minutes, stirring constantly.
- Remove the saucepan from heat and stir in the vanilla and peanut butter until well combined.
- Add the quick oats to the mixture and stir until all the oats are coated.
- Drop spoonfuls of the mixture onto a baking sheet or pour it into a cake pan.
- Allow the cookies to cool before cutting, or let them set in the cake pan.
Mom loved the cookies tonight, even though they turned out a little soft. (It was storming as I was cooking, so we’ll blame that.) It’s such a special experience for me to use my dad’s recipe. I miss him so much.
