Tomato Goulash Delight with Easy Homemade Biscuits

I had so many tomatoes that they started to go bad, so I decided to make tomato goulash and homemade biscuits. The tomato goulash is simple but delicious. Here’s the way I do it

Ingredients:

  • 4 or 5 pieces of bacon, cut into lardons or thin strips
  • 1 medium onion, chopped
  • 1 large garlic clove, diced
  • 4 large tomatoes, chopped
  • 1/4 cup of dill pickle juice
  • Salt and pepper, to taste

Instructions:

  1. Cut 4 or 5 pieces of bacon into lardons or thin strips and let it start to brown.
  2. Add 1 medium chopped onion and 1 large garlic clove diced and sauté until translucent and fragrant.
  3. Next, add 4 large tomatoes chopped, about 1/4 cup of dill pickle juice (don’t skip the pickle juice).
  4. Add salt and pepper to taste.
  5. Cook until the dish comes together and the liquid has mostly evaporated, about 15 minutes.
  6. Spoon the tomato goulash over homemade biscuits.

 

Homemade Biscuits  2-Ingredient Biscuits

 

Ingredients:

  • 2 cups self-rising flour
  • 1 1/2 cups heavy cream

Instructions:

  1. Preheat the oven to 500°F.
  2. In a mixing bowl, combine 2 cups of self-rising flour and 1 1/2 cups of heavy cream.
  3. Stir the ingredients together until a dough forms.
  4. Turn the dough out onto a lightly floured surface and knead it gently a few times to bring it together.
  5. Roll or pat the dough to a thickness of about 1 inch.
  6. Use a biscuit cutter or a glass to cut out biscuits from the dough.
  7. Place the biscuits on a baking sheet lined with parchment paper or a silicone mat.
  8. Bake the biscuits at 500°F for 8 to 10 minutes, or until they are golden brown on top.
  9. Remove the biscuits from the oven and let them cool slightly before serving.
