Strawberry Lemonade Upside Down Cake

My husband asked for a strawberry lemonade upside down cake for his birthday. I got to work.

 

Recipe

I just made it up as I went, so I will do my best to describe it.

Ingredients:

  • 1 pound strawberries, topped and cut in half
  • 1/4 cup unsalted butter
  • 1/4 cup granulated sugar
  • 1 boxed lemon cake batter (mixed per box instructions or your own recipe. I plan on finding a lemon cake recipe for my next attempt.)

Instructions:

  1. Preheat oven and pan to 350°F.
  2. Melt butter in the pan and evenly spread sugar into the melted butter.
  3. Lay strawberries flat side down as tightly as you can until the bottom of the pan is covered.

  5. Slowly pour batter over strawberries and level.
  6. Bake for 40-50 minutes or until a toothpick comes out clean.
