Strawberry Lemonade Upside Down Cake
My husband asked for a strawberry lemonade upside down cake for his birthday. I got to work.
Recipe
I just made it up as I went, so I will do my best to describe it.
Ingredients:
- 1 pound strawberries, topped and cut in half
- 1/4 cup unsalted butter
- 1/4 cup granulated sugar
- 1 boxed lemon cake batter (mixed per box instructions or your own recipe. I plan on finding a lemon cake recipe for my next attempt.)
Instructions:
- Preheat oven and pan to 350°F.
- Melt butter in the pan and evenly spread sugar into the melted butter.
- Lay strawberries flat side down as tightly as you can until the bottom of the pan is covered.
- Slowly pour batter over strawberries and level.
- Bake for 40-50 minutes or until a toothpick comes out clean.
