Homemade Filled Donuts: Lemon, Chocolate, Crème & Strawberry

Filled Donuts

I made filled donuts for after church tonight. I hope they like them! The flavors include lemon, chocolate, crème, and strawberry, and all are glazed.

Donuts

  • 1 C warm water
  • 1 1/2 tsp or 1 packet dry rapid rise yeast
  • 3 Tbs sugar
  • 1/2 tsp salt
  • 1/4 C oil
  • 4-4 1/2 C all-purpose flour

Instructions:

  • Mix warm water and yeast until the yeast has dissolved.
  • Add sugar, salt, oil, and flour.
  • Stir or mix with a dough hook until it forms a soft ball.
  • Lightly oil the dough and cover. Set it in a warm place to rise.
  • After the dough has doubled in size, knead it for 4-5 minutes (kneading in the bowl is fine).
  • Put the dough on a lightly floured surface and pat out to about 3/4 inch thick.
  • Cut out donuts. If you’re not filling them, be sure to cut out the holes.
  • Get a large skillet and add about 1 1/2 inches deep of oil.
  • When the oil is hot, place the donuts in until the skillet is full (mine holds 8).
  • Fry until golden on each side, then remove and place on a cookie sheet lined with paper towels.
  • Continue until all donuts are fried.

Filling

  • Chocolate pudding (instant)
  • Lemon (Jello brand cook and serve, prepared according to directions and cooled)
  • Strawberry (or other desired filling)

Instructions:

  • Use a skewer to make holes in your donuts, going into the side but not through the other side.
  • Use a piping bag and a tip to fill your donuts with the desired filling.

Crème Filling

  • 1 C milk
  • 4 Tbs flour (self-rising or plain)
  • 1 C shortening
  • 1 C sugar

Instructions:

  • In a small saucepan, combine milk and flour. Stir constantly over medium heat until it gets thick (it will be very thick).
  • Let it cool completely.
  • Put the mixture in a mixing bowl, add sugar and shortening, and whip with a mixer until light and fluffy.
  • Use a piping bag to fill the donuts.

Glaze

  • 2 C powdered sugar
  • Milk (1 Tbs at a time to desired consistency)
  • 1/2 tsp butter (optional)

Instructions:

  • Mix powdered sugar with milk, adding 1 Tbs at a time until you reach the desired consistency.
  • You can add about 1/2 tsp of butter for extra richness.
