Cookie Countdown to Christmas

These cookies are one of mama’s specialties from my childhood. I don’t think mine look as pretty as hers. 😊
According to my husband, these are “the perfect morning coffee cookie.”
I try to use quality ingredients when I bake, especially during the holiday season. The pecans are from nearby Georgia. 😉

Crispy Pecan Cookies recipe 

Thoroughly cream:

  • 1/2 cup shortening
  • 1/2 cup butter
  • 2 1/2 cups brown sugar

Add:

  • 2 beaten eggs

Sift together & add to mixture:

  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Add:

  • 1/2-3/4 cups chopped pecans

Instructions:

  • Drop by teaspoonful onto greased cookie sheet about 2″ apart.
  • (I like to put a pecan half on top of each cookie.)
  • Bake at 350°F for 12-15 minutes.
  • Cool on racks.
    (Makes 5 dozen)
