Peach Skillet Cobbler – Easy Cast Iron Dessert
There’s just something magical about a warm, peachy dessert bubbling away in a cast iron skillet. If you grew up in the South, you know exactly what I mean. This peach skillet cobbler is one of those “a little bit of this, a little bit of that” recipes, passed down through kitchen memory rather than exact measurements. But don’t worry—I’ve wrangled the ingredients into a recipe that’s easy to follow and downright delicious.
Made with canned peaches (or home-canned if you’re lucky), a simple sour cream batter, and baked to golden perfection in a 12-inch cast iron skillet, this peach skillet cobbler is the ultimate comfort food. It’s not too sweet, not too gooey, and perfect on its own—or even better with a scoop of vanilla ice cream melting into those warm peach juices.
Ingredients for Peach Skillet Cobbler
- 1 cup sugar
- 2 tablespoons unsalted butter (room temp)
- 1 tablespoon vegetable oil
- 1/3 cup sour cream
- 1 large egg
- 3/4 cup milk
- 2 teaspoons baking powder
- 2 cups all-purpose flour
- 2 cans (15–16 oz each) sliced peaches in heavy syrup (or 2 pint jars of home-canned peaches)
- Optional: 1/2 cup white grape or apple juice (for extra gooeyness)
How to Make Peach Skillet Cobbler
1. Preheat the Oven with the Skillet Inside
Place your cold 12-inch cast iron skillet in a cold oven. Set the oven to 350°F (175°C) and let the skillet heat up as the oven preheats. This helps give the cobbler a crisp edge and even bake.
2. Mix the Batter
In a large mixing bowl, cream together the sugar, butter, and oil. Add the sour cream and mix until smooth. Add the egg and stir until well combined.
Stir in the milk and baking powder. Then add the flour and mix until you have a thick but spreadable batter.
3. Add Batter to Hot Skillet
Carefully remove the hot skillet from the oven. Spread the batter evenly across the bottom (it will sizzle a little—just go with it!).
4. Add the Peaches
Open the canned peaches and pour them evenly over the top of the batter, syrup and all. If you want extra gooey texture, mix in 1/2 cup of white grape or apple juice with the syrup before pouring.
5. Bake Until Golden
Return the skillet to the oven and bake for about 60 minutes, or until the top is golden brown and a knife inserted into the center comes out clean.
Let cool for 10–15 minutes before serving. It’s best warm, especially with a scoop of ice cream.
Cast Iron Cobbler Tips
- Use a well-seasoned skillet to prevent sticking.
- Home-canned peaches give it extra flavor—but store-bought works great too.
- Don’t overmix the batter—just stir until combined.
- Want a crispier top? Sprinkle a little sugar over the peaches before baking.
Serving & Storage
Serve warm right out of the skillet. Store any leftovers in the fridge for up to 3 days. Reheat in the oven or microwave.
