Sweet Potato Pound Cake Recipe!!!

Pound Cake Batter

  • 8 oz Cream Cheese
  • 8 tbsp Crisco Shortening (Butter Flavor)
  • 2 sticks Butter
  • 3 cups Sugar
  • 5 Eggs
  • 3 cups All Purpose Flour (I used Swan Cake Flour)
  • 1 cup Milk
  • 2 tsps Vanilla extract
  • 1/2 tsp Baking Powder
  • 1/2 tsp Salt

Sweet Potato Filling

  • 4 large Sweet Potatoes
  • 2 large Eggs
  • 1/4 cup Melted Butter
  • 1/4 cup Milk
  • 1 cup of Sugar
  • 1/2 cup Brown Sugar
  • 3 tbsps All Purpose Flour (I used Swan Cake Flour)
  • 1 tsp Vanilla Extract
  • 1 tsp Cinnamon
  • 1/4 tsp Nutmeg

Caramel Glaze

  • 1 1/2 cups Powder Sugar
  • 2 tsps Caramel Syrup
  • 2 tbsps Milk
  • 1/2 tsp Vanilla Extract
  • 2 pinches of Salt

Cake Mix by the Pound:

  1. Put flour, salt, and baking powder in a bowl and mix them together. Put aside.
  2. Melt butter and cream cheese together. Add sugar one cup at a time, then eggs one at a time, and finally vanilla extract.
  3. One at a time, add the flour mixture and milk, starting with the flour and finishing with the milk. Put aside.

Filling for Sweet Potatoes:

  1. Once the potatoes are mashed, add the rest of the ingredients and mix them together until there are no more lumps.

Baking Instructions:

  1. Put the pound cake in the oven at 325°F for one hour and twenty minutes, or until a toothpick or fork comes out clean.
  2. Let the cake cool in the pan for twenty to twenty-five minutes.

Glaze:

  1. Powdered sugar, caramel syrup, salt, vanilla extract, and milk should all be mixed together in a small bowl.
  2. Pour over the cooled cake.
