Best Strawberry Bread Recipe: A Burst of Freshness in Every Slice

Busy in the kitchen today. Made 9 jars of strawberry jam, and baked a couple loaves of strawberry bread. And saved enough strawberries to go with supper, which was leftover egg noodles with chicken. Also had mixed buttered vegetables, sliced tomato and sweet tea. Tasted great.
For the jam, I just followed the directions in the box of Sure Gel. It set up perfect and it’s so nice to hear that ‘ping’ when they seal. 😁

Strawberry Bread recipe

Strawberry Jam Bread

Ingredients:

  • 2 cups fresh strawberries
  • 3 1/8 cups all-purpose flour
  • 2 cups white sugar
  • 1 tablespoon cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 1/4 cups vegetable oil
  • 4 beaten eggs

Instructions:

  1. Preheat oven to 350°.
  2. Butter and flour two loaf pans.
  3. Slice strawberries into a medium-sized bowl and sprinkle lightly with some sugar. Set aside.
  4. In a mixing bowl, combine flour, sugar, cinnamon, salt, and baking soda. Mix well.
  5. Blend the oil and beaten eggs into the strawberries.
  6. Add the strawberry mixture into the flour mixture, blending until the dry ingredients are just moistened.
  7. Divide the batter into the prepared pans.
  8. Bake in the preheated oven for 45 to 50 minutes or until a toothpick comes out clean.
  9. Let the loaves cool in the pans on a wire rack for ten minutes.
  10. Turn the loaves out of the pans and let them cool completely before slicing.
