Mexican Wedding Cake Cookies
Ingredients:
- 1 cup softened butter
- 1 teaspoon vanilla extract
- 6 tablespoons powdered sugar
- 2 cups all-purpose flour
- 1 cup chopped pecans
Coating:
- Additional powdered sugar for rolling
Instructions:
- Preheat Oven:
- Preheat your oven to 350°F.
- Creaming:
- In a mixer bowl, cream together:
- 1 cup softened butter
- 1 teaspoon vanilla extract
- In a mixer bowl, cream together:
- Dry Ingredients:
- In a separate bowl, combine:
- 6 tablespoons powdered sugar
- 2 cups all-purpose flour
- Stir the dry mixture into the butter mixture until just blended.
- In a separate bowl, combine:
- Add Pecans:
- Mix in:
- 1 cup chopped pecans
- Mix in:
- Forming Cookies:
- Roll the dough into 1″ balls and place them 2″ apart on an ungreased cookie sheet.
- Baking:
- Bake for 12 minutes in the preheated oven.
- Coating:
- When cool, roll the cookies in the remaining powdered sugar.
