old fashioned Potato Candy
Ingredients:
- Bag confectioners sugar
- Peanut butter (amount depends on how thick or thin you spread it)
- Vanilla
- Big baking potato, cooled (Important: heat melts sugar and makes runny candy)
Instructions:
- Mix the cooled potato, confectioners sugar, and vanilla.
- Roll out dough flat after it chills.
- Spread peanut butter over the dough.
- Roll the dough up and rechill.
- Slice and let air dry on a plate.
Stores well and can be frozen for holidays. For prettier slices, rechill before slicing (I couldn’t wait…lol).
