Blue Ribbon Kentucky Jam Cake


  • 2 1/2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon allspice
  • 1/2 teaspoon cinnamon
  • 1 cup chopped walnuts
  • 2 tablespoons flour (for coating nuts)
  • 1 cup softened margarine
  • 2 cups sugar
  • 5 eggs
  • 1 teaspoon vanilla
  • 1 cup buttermilk
  • 1 teaspoon baking soda
  • 1 cup blackberry jam (make sure it’s jam!)


  • Warm the oven up to 325 degrees.
  • Flour and Grease Three 8- or 9-inch round cake pans
  • Add the flour, salt, and spices and mix them together.
  • Add 2 tablespoons of flour to the chopped nuts.
  • Margarine and sugar should be mixed until they are light and foamy.
  • Mix the eggs and vanilla together.
  • Mix the soda and buttermilk together.
  • Using an electric mixer, slowly mix the flour, buttermilk, and egg mixtures together until they are all well mixed.
  • Add the nuts after mixing in the jam.
  • Pour into cake pans that have been prepped.
  • Let it bake for an hour or two.
  • I usually make my own caramel icing, but the caramel sea salt icing from a can is better. It needs about three cans of icing.
