Vanilla Sprinkle Cookies and Savory Pork Roast Recipe

More Christmas cookies today Baked another batch of Mexican Wedding Cakes and did some Vanilla Sprinkle Cookies ( these are so good). I also mixed up some Sugar Cookie dough and it’s chilling in the fridge. Will bake them tomorrow.
Since I was busy, I let the Crock Pot do the cooking. Pork roast, potatoes and carrots. Also had applesauce and a mug of hot sweet tea. For the roast, I just put it in the crock pot with part of an envelope of onion soup mix, a little chicken broth and the carrots. Put on high for a couple hours then turned to low and added some cut up potato and celery. Let cook on low till done . Really good.

Vanilla Sprinkle Cookies recipe :

Vanilla Sprinkle Cookies recipe


  • 2 C all purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 C unsalted butter, room temperature
  • 1/2 C sugar
  • 1/2 C powdered sugar
  • 1/4 C oil (vegetable oil)
  • 1 egg
  • 2 tsp vanilla extract
  • A tad bit of almond extract
  • 1 cup rainbow sprinkles


  1. In a medium bowl, combine flour, baking soda and salt. Set aside.
  2. In a stand mixer fitted with a paddle attachment, cream together butter, oil, sugar, and powdered sugar until fluffy, about 3 minutes.
  3. Add egg and vanilla extract and beat to combine.
  4. Add dry ingredients and mix just until dough comes together. Dough will be very soft.
  5. Wrap the dough in plastic wrap and refrigerate for at least an hour.
  6. Preheat oven to 350 degrees F and adjust oven racks to upper and lower middle positions.
  7. Line baking sheets with parchment paper.
  8. Fill a shallow bowl with sprinkles.
  9. Use a cookie scoop or rounded teaspoonfuls to form cookies into balls.
  10. Roll each ball in sprinkles to cover and place on cookie sheets.
  11. Bake until cookies are golden at the edges, about 20 minutes.
  12. Let cool for 5 minutes, then transfer to a wire rack to finish cooling.

  1. Place pork roast in a crock pot with part of an envelope of onion soup mix, a little chicken broth, and the carrots.
  2. Put on high for a couple of hours then  turn to low and add cut up potato and celery.
  3. Let cook on low until done.
